Joy and Jump Rope

1, 2, 3, 4, 5, 6, 7, 8, 9, 10, 11, 12, 13, 14, 15, 16, 17, 18, 19, 20, 21, 22, 23, 24, 25, 26….oooohhh

I made it to 26 in jumping rope. I’m kinda proud. I think I need to stop and play jump rope more often. Forget about words like sustainable development, community-based organizations, NGOs… I wanna talk about giggling, happy primary school students, playing in the sunshine and just general feel-goodery.

I do want to “do” something while I’m here and selfishly, I would like that something to be big picture/newsworthy/important/noticed. BUT on the goldeny, sunshiny days like today, after I’ve finished all my laundry and re-read one of the Dune books, I’m content and happy and glad and all those kinda words to just play, laugh and be silly with the St. Theresa girls. And I can forget about the “Peace Corps” label. Forget what people may or may not be thinking about what I’m doing on this side of the world. Forget the pressures of being here. And remember joy.

Matre, I think you’ve been trying to get us to remember joy all our lives. Here I am being joyful.

Flour (maize and wheat), most spices, baking powder and soda, different kinds of oils, bananas, apples, guava, papaya, mango, passion fruit, jackfruit, pineapple, peanuts, cassava (type of root), potato, avocado, beans, rice, tomatoes, eggplant, peas, cabbage, ginger, onion, carrots, and garlic.

Any ideas for delicious meals?

  2. Celeste, if you are "being" joyful, you can't help but give joy to others. That's a precious gift in Uganda... or anywhere. That's noteworthy, if you ask me.

    many of my favorite memories exist
    because of dirty dishes in the sink...

    yay! recipes
    okay, cassava- you said is a root, like a potato
    so, try this:
    slice into long strips,like thick french fries
    boil them first(in salt water),about30 minutes
    then put them on a pan with olive oil, crushed garlic, black pepper, diced onion, mix/coat well over the cassava and bake for about 15/20 minutes(until toasty on the outside).
    you could serve it with advocado and a bowl of beans. yum
    NOW dessert.
    cut 3/4 apples-
    butter the bottom and sides of a pan--
    put the sliced apples in the pan.
    mix: 1/3 cup flour, 1/4 cup sugar, plus 1/4 cup brown sugar, if you have it, 3/4 cup oats
    1/4 cup water and 1/4 cup melted butter.
    pour the mix over the apples
    you could add 1 tbsp cinnamon, if you have it
    bake for about 30 minutes, or until the apples are tender. really yum!

  7. this is fun.
    Put 1 1/2 cups water with 1 cup rice.
    Add a pinch of salt, some pepper and
    a couple of sprigs of rosemary.
    bring to a boil.
    After it is at a boil, lower the heat so
    it is simmering. Cover, leaving a small opening so the steam can escape.
    Simmer for about 20 minutes, till the rice is tender. Set to the side.
    (never stir the rice too much while it is cooking or it will be too soft, like atole)
    Now the Eggplant.
    In about 3tblsp olive oil saute/brown
    half of an eggplant(sliced).
    you can add salt, pepper,
    a clove or two of garlic
    about 2tblsp diced onions
    cook till the eggplant is tender.
    You can serve the eggplant over the rice.

    i've made this with squash, but since you did not have it on your list, i thought eggplant would do.

  9. SOUP! ~because it is cold here :)
    saute-
    2 cloves of garlic, diced
    1/2 of a small onion, diced
    in 2tbsp olive oil for about 2 minutes.
    add(diced)-
    3carrots , 1/2 small cabbage, 1/2 eggplant, 1 large or two small tomatoes, 1 large or two small potatoes.
    saute all ingredients for about a minute.
    add 1 can chicken broth(or two if you want more broth)
    if you can not get cans of chicken broth, you could use one, or two of the knorr packets i sent you.
    add
    1 cup of rice. -you could also add peas.
    at this point you can add
    a little salt, pepper, rosemary, oregano, thyme.
    stir gently~ think of me :)
    let it simmer about 35 minutes.
    mmmmmm
    eat con gusto y gracias!
